The Process

Grain Being Added to the Boiling Pot

Step 1: Ingredients

We strive to seek out only the finest corn, rye, and malted barley available in the US.
Starting Mash

Step 2: Mash Kettle

Our still masters saturate the finest grains with hot water in our mash kettle.
Tank

Step 3: Fermentation

We cool down the mash to 75 to 80 degrees for the fermentation process, which can last from five to seven days.

Step 4: Distillation

The mash is then transferred into our custom built 1000-gallon Christian Carl copper pot still for distillation.

Measure

Step 5: Process

Spirits enter in vapor form under pressure two separate times for a double distillation. Only the finest portion of the distillate is collected also known as the “hearts cut.”
Barrels

Step 6: Aging

The hearts cut is then proofed to 120 and poured into new American Oak #4 char barrels from four to seven years.

Step 7: After Aging

Before bottling, the aged whiskey is blended and proofed down with purified limestone water pulled from the Artesian Zone of the Edward’s Aquifer. The blend is then chilled to 45 degrees before it is filtered through natural fiber pads, removing fats and impurities while only letting the purest whiskey through.
